Breakfast any time!

Skinny Minny Tip: Eat breakfast, all the time... anytime!

Breakfast is so flavorful, and can be very low in calories! So instead of wiping up some steak or chicken dish... try a egg white omelet or topping filled fritata for dinner :)

inexpensive and figure friendly ;)

Chimichuri

The perfect way to top... a steak, grilled chicken, mashed potatoes... it's CHIMICHURI! and I love it :)

Ingredients
olive oil
basil
chives (large, homegrown)
cilantro
lemon
lemon zest
salt and pepper to season
mix final product with sour cream for an amazing flavored sour cream... perfect to top potatoes with or tacos!

I ordered the herbs from top (the ones I use the most of) to the bottom (which are the ones I use the least of) in this recipe.

Step One
Get out your food processor! In it add basil (about one large handful) and almost the same amount of chives. Toss in a little bit of cilantro as well. Pour in olive oil as needed, along with the juice of half a lemon. Zest half a lemon as well.

Step Two
Blend! Season with salt and pepper to taste. Add extra herbs, or Olive oil/lemon if needed.

Caramelized Onions on Brie - in Puff Pastry

Inspired by one of my favorite combo's - brie wrapped in puff pastry - I decided to spice up the recipe for a Christmas party. My rendition featured caramelized onions on top of the brie to add a depth of flavor. All I can see is YUM!

One of the best things about this dish... it's inexpensive! The whole thing will cost you $15 or less!

Ingredients
1 wedge (round) of brie
1 sheet puff pastry
1 medium sweet onion
4 tablespoons butter
balsamic vinaigrette
butterfly crackers

Step One
Preheat your oven to 400 degrees. Chop the onion in to small pieces. Melt butter in skillet and saute onion in skillet until golden brown (about 20 minutes). Once almost caramelized, splash with balsamic vinaigrette.

While onions are being caramelized, cut off hard part (rind) of brie.

Step Two
Place brie in middle of puff pastry. Put caramelized onions on top of brie. Wrap in puff pastry. Use water to seal edges. Brush with egg wash mixture (egg and water) if desired.

Step Three
Bake in oven on 400 (place brie on parchment paper) for 20 - 25 minutes. Let cool for 10 - 30 minutes and serve with crackers...
